Ingredients

- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 sprigs fresh thyme (optional)
- 2 cloves garlic, smashed (optional)
Instructions
- Preheat sous vide machine to 145°F (63°C).
- Season chicken breasts with salt, pepper, and olive oil.
- Place chicken into vacuum-sealed bag or zipper bag using water displacement method.
- Add thyme and garlic if using.
- Cook in sous vide bath for 1.5 to 2 hours.
- Remove chicken from bag, pat dry with paper towels.
- Quickly sear in a hot skillet for 1 minute per side to develop golden crust.
- Slice and serve immediately.
Notes
For extra flavor, marinate chicken beforehand or finish with a sauce of your choice.
