  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 2 cups semisweet chocolate chips
  • 2 tablespoons shortening

Instructions

  1. In a large bowl, mix together peanut butter, butter, and vanilla until smooth.
  2. Gradually add powdered sugar and stir until fully combined.
  3. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
  4. Chill the balls in the refrigerator for about 30 minutes until firm.
  5. In a microwave-safe bowl, melt chocolate chips with shortening, stirring until smooth.
  6. Dip each peanut butter ball into the melted chocolate using a fork, letting excess chocolate drip off.
  7. Return the coated balls to the parchment-lined sheet.
  8. Refrigerate until the chocolate is set, about 1 hour.

Notes

For easier dipping, keep the peanut butter balls well chilled before coating. You can also drizzle white chocolate on top for decoration.
