- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 2 cups semisweet chocolate chips
- 2 tablespoons shortening
Instructions
- In a large bowl, mix together peanut butter, butter, and vanilla until smooth.
- Gradually add powdered sugar and stir until fully combined.
- Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Chill the balls in the refrigerator for about 30 minutes until firm.
- In a microwave-safe bowl, melt chocolate chips with shortening, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate using a fork, letting excess chocolate drip off.
- Return the coated balls to the parchment-lined sheet.
- Refrigerate until the chocolate is set, about 1 hour.
Notes
For easier dipping, keep the peanut butter balls well chilled before coating. You can also drizzle white chocolate on top for decoration.
