- 300g pasta (penne or spaghetti)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 2 cups vegetable broth
- 1 zucchini, chopped
- 1 cup spinach
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Grated Parmesan cheese (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and cook for 1 minute.
- Add zucchini and cook for another 2 minutes.
- Pour in diced tomatoes and vegetable broth.
- Add pasta, oregano, salt, and pepper.
- Bring to a boil, then reduce to a simmer.
- Cook uncovered for 10-12 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
- Stir in spinach and cook until wilted.
- Serve hot with grated Parmesan if desired.
Notes
Use whole wheat or gluten-free pasta if preferred. Add cooked chicken or sausage for extra protein.
