Description

This one-pot pasta recipe is a quick, comforting, and delicious dish made with minimal cleanup. Perfect for busy weeknights!


Ingredients

  • 300g pasta (penne or spaghetti)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 2 cups vegetable broth
  • 1 zucchini, chopped
  • 1 cup spinach
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and cook for 1 minute.
  4. Add zucchini and cook for another 2 minutes.
  5. Pour in diced tomatoes and vegetable broth.
  6. Add pasta, oregano, salt, and pepper.
  7. Bring to a boil, then reduce to a simmer.
  8. Cook uncovered for 10-12 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
  9. Stir in spinach and cook until wilted.
  10. Serve hot with grated Parmesan if desired.

Notes

Use whole wheat or gluten-free pasta if preferred. Add cooked chicken or sausage for extra protein.
