- 150g panko breadcrumbs
- 2 medium carrots, julienned

- 150g crispy fried onions
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat oven to 180°C.
- Spread nuts and panko breadcrumbs on a baking tray, drizzle with olive oil, and roast for 10 minutes until golden and crunchy.
- In a bowl, mix soy sauce and honey to prepare a light dressing.
- Add carrots, cucumber, and bell pepper to the bowl and toss with the dressing.
- Top with the roasted nut-breadcrumb mix and crispy fried onions.
- Season with salt and pepper to taste.
- Serve immediately for maximum crunch.
Notes
