- 4 ripe bananas, sliced
- 1 box vanilla wafers (about 300g)
- 2 cups whole milk
- 1/2 cup sugar
- 1/4 cup cornstarch
- 4 egg yolks
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp powdered sugar
Instructions
- In a saucepan, whisk together sugar, cornstarch, and milk. Cook over medium heat, stirring constantly, until thickened.
- In a bowl, whisk egg yolks. Slowly add some hot milk mixture to temper, then pour back into the saucepan.
- Cook for another 2-3 minutes, then remove from heat and stir in vanilla extract. Let cool slightly.
- In a serving dish, layer vanilla wafers, banana slices, and pudding. Repeat layers until the dish is filled.
- Whip heavy cream with powdered sugar until soft peaks form. Spread over the top layer.
- Chill for at least 2 hours before serving.
Notes
For extra flavor, top with crushed vanilla wafers before serving. Best eaten within 2 days for the freshest banana taste.
