A gorgeous Fresh Strawberry Drip Cake layered with fluffy sponge, fresh strawberries, and creamy frosting, topped with a stunning strawberry drip.

- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 ½ cups fresh strawberries, chopped
- 3 cups heavy cream
- 1 cup powdered sugar
- 8 oz cream cheese, softened
- 1 cup strawberry jam
- Fresh strawberries for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Alternate adding dry ingredients and buttermilk into the butter mixture. Fold in chopped strawberries.
- Divide batter evenly between pans and bake 25-30 minutes or until a toothpick comes out clean. Cool completely.
- For frosting: beat cream cheese until smooth, then add powdered sugar and whip. Slowly add heavy cream and beat until fluffy.
- Spread frosting between cake layers and cover the cake completely.
- Warm strawberry jam slightly and drizzle around edges for drip effect.
- Top with fresh strawberries and chill before serving.
Notes
Make sure cakes are fully cooled before frosting to avoid melting. For a smoother drip, slightly warm the strawberry jam.
