Description

A whimsical and colorful cotton candy cake, soft and fluffy with layers of sweet buttercream and topped with clouds of cotton candy.


Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • Pink and blue food coloring
  • 4 cups buttercream frosting
  • Fresh cotton candy for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Gradually add dry ingredients alternating with milk, mixing until combined.
  6. Divide batter evenly into two bowls and tint one pink and one blue.
  7. Layer the batters alternately into the pans for a swirl effect.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool completely before frosting with buttercream.
  10. Top generously with cotton candy just before serving.

Notes

Add cotton candy only before serving to prevent it from melting into the cake.
