Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup caramel bits or chopped soft caramels

Instructions

  1. Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. Cream together cream cheese, butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in caramel bits or chopped caramels.
  7. Scoop tablespoon-sized portions onto prepared baking sheet.
  8. Bake for 10–12 minutes or until edges are lightly golden.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra gooey caramel pockets, press a few caramel bits into the top of each cookie dough ball before baking.
