- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups brown sugar
- 1/2 cup granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup buttermilk
- 1/2 cup butterscotch chips (optional)
- 1 cup unsalted butter (for frosting)
- 2 cups brown sugar (for frosting)
- 1/2 cup heavy cream (for frosting)
- 4 cups powdered sugar (for frosting)
- 2 tsp vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Alternate adding the dry ingredients and buttermilk to the wet mixture, starting and ending with dry ingredients.
- Fold in butterscotch chips if using.
- Divide batter evenly between pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes completely before frosting.
- For the frosting: In a saucepan, melt butter and stir in brown sugar. Cook over medium heat until bubbly, then add cream and bring to a boil for 1 minute.
- Remove from heat and cool slightly. Beat in powdered sugar and vanilla until smooth.
- Frost between layers and over the top and sides of the cake.
Notes
For extra flavor, drizzle additional caramel sauce over the top before serving.
