- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda

- 1 cup chopped walnuts
- 1/2 cup milk
- 1/2 cup sugar (for syrup)
- 1/4 cup water (for syrup)
- 1 tbsp lemon juice (for syrup)
Instructions
- Preheat oven to 180°C (350°F). Grease and flour a cake pan.
- Cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in mashed bananas and vanilla extract.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet mixture, alternating with milk.
- Fold in chopped walnuts.
- Pour batter into prepared pan and bake for 40-45 minutes or until a toothpick comes out clean.
- Meanwhile, prepare syrup by simmering sugar, water, and lemon juice until slightly thickened.
- Once cake is baked, let cool slightly, then drizzle warm syrup over the cake.
Notes
For extra flavor, toast the walnuts before adding them to the batter. Best served warm with a drizzle of extra syrup.
