Cheesy, crispy, and packed with flavor — these Air Fryer Birria Quesadillas are a quick and satisfying twist on the classic Mexican favorite.

- 2 cups shredded birria beef (leftovers or pre-cooked)
- 1 cup birria consommé (for dipping)
- 4 large flour tortillas
- 1 ½ cups shredded mozzarella or Oaxaca cheese
- ½ cup diced white onion
- ¼ cup chopped fresh cilantro
- Cooking spray or a light brush of oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- Lay out tortillas and sprinkle cheese evenly on half of each tortilla.
- Add shredded birria beef, onions, and cilantro over the cheese.
- Fold tortillas in half to form quesadillas.
- Lightly spray both sides of each quesadilla with oil or cooking spray.
- Place in air fryer basket (work in batches if needed).
- Cook for 5-6 minutes, flipping halfway, until golden brown and crispy.
- Serve hot with warm birria consommé for dipping.
Notes
You can use leftover birria meat or prepare it in advance. Adjust air fryer time slightly depending on your model.
